I like to cook. I dare say that there are times I love to cook. I do not, however, like deciding what to cook (unless I'm hosting a soiree and then I tend to go overboard planning a nice meal). I recently gave the boys one of my cookbooks and asked them to look over it and mark the pages of things they would like to eat.
Thomas chose on Monday night. He chose Car Meatball sandwiches. He even chose the cars to use to decorate the plate.

It's just a meatball sub in a small roll. I hollowed out the roll and put meatballs and sauce in it. Then attached the cucumbers to the roll with matchstick carrots. The recipe had black olives for headlights and a mini pretzel for a windshield. Of course the boys took off the wheels, but the rest of if was a hit.

Then it was Matt's turn to choose. So on Tuesday night we had Veggie Pizza Cupcakes (Matt said, "except with no veggies'.) I didn't have anything resembling pepperoni , but I did have bacon. So the inside is bacon, mushrooms, onions,
shredded zucchini-shhh don't tell anyone, and mixed with tomato sauce and spices. The recipe called for the tube biscuits which they don't sell here, so I had to whip up a batch of my own biscuits. Here is Matt rolling it out and cutting out the circles to put in the muffin tin.


Then I put the pizza mixture into the muffin tins and baked for 15 minutes. I topped it with cheese and cooked another 5 minutes. Each boy ate 3 of them. I wonder what else I could hide in there!
